Kabseh




Kabseh is a rice/chicken dish from Saudi Arabia but many of our friends here make it for us. I thought I'd give it a try tonight for supper. It was pretty easy to make and very tasty.

  1. It looks SO yummers! What is the top picture of? Chicken? Can't wait for you to cook for us again your next visit - I am rationing our sesame seeds and thyme mixture - the kids LOVE it - there is a bit left - one more meal I think!

    Ok this is different but it's how they cook over here...

    Boil chicken with cinn. sticks,basil leaves and about cup and a half of tomato paste

    Rinse and dry basmati rice then put kebsah spices through it which are...1tsp corrinander ,cloves, 1/4 cinn, 1/2 tsp nutmeg,1/2 7 spices, 1 1/2 tsp salt
    then take the broth the chicken has boiled in and put it with the rice to boil and cook rice.

    Fry pine(put on all main dishes over here) and pistachio nuts with butter or olive oil then in another pan fry up diced tomatos and onions. Mix it with the finished rice

    Then to present it Arab style you would put it on a large round dish called 'Sader' place rice down first then meat on top of the rice in the middle and garnish with the nuts all over...serve with plain yogurt and a salad that's it :) hope you like it
