Maqluba
We host a lot of local friends in our home. It's not easy to make food like the women do here. This culture is so hospitable and kind. Yet I still find it can be rather scary to entertain them. They love it when we try to make the food they enjoy and they are more comfortable eating what they are used to. So before Ramadan hits and we have a stream of guests. I thought it was high time I learn to make some more arab dishes. Here I am trying my hand at Maqluba. A layered egg plant, potato, chicken and rice dish.
