This months favourite recipes

I do a fair amount of hosting which I really enjoy but I am no chef. I don't have time for detailed recipes so I'm always looking for something new and easy to give our guests.

PINEAPPLE CHEESE SPREAD - This is yummy on tortillas
8 oz. cream cheese, softened 1 can crushed pineapple
2 to 3 tbsp. chopped pecans.
Blend together and chill.

My favourite Middle Eastern salad
2 cups olive oil 2 pieces pita bread toasted, each cut into 4 pieces 500g cherry tomatoes, halved 2 cucumbers, halved lengthways, deseeded, chopped 1 red capsicum, chopped 3 small radish, trimmed, thinly sliced 4 green onions, chopped 1 cup flat-leaf parsley leaves
1/2 cup mint leaves, coarsely chopped 1 tablespoon sumac Dressing is 1/4 cup olive oil 1/2 cup lemon juice ,2 teaspoons sumac
 



 
 

EASY BROCCOLI QUICHE
1 pkg. chopped broccoli or spinache, thawed
1 c. Cheddar cheese, grated
Sm. onion, chopped
3 eggs
3/4 c. Bisquick
1 1/2 c. milk
I also add cut up pastrami beef cold cut as there's no bacon in my dishes :)


This soup is always a winner with my Arab friends at Ramadan.
  
TOMATO BARLEY SOUP
  a few chopped onions                  
 1 cup chopped carrots
 2 teaspoons minced garlic
 saute veg. till tender
 2 1/2 cups water
 2 tomatoes, diced
 1 can peeled and diced tomatoes with juice
 1 can chicken broth
 1/4 cup uncooked barley
 salt and  ground black pepper
